Broccoli salad

8 slices of bacon (or if you make it like me, the WHOLE package!)
2 large heads of broccoli, cut up
1 1/2 c sharp cheddar, shredded
3 green onions, cut up
1/4 c apple cider vinegar
1/8 c white sugar
salt & pepper to taste
2/3 c mayo
1 t fresh lemon juice

cook bacon until crispy and crumble

In a large bowl, combine broccoli, cheese, bacon, and onion

prepare dressing combining vinegar, lemon juice, sugar, pepper, salt, & mayo.

Combine dressing with salad. Mix well.

Cover and refrigerate until ready to serve.

I just started making this... Oh man it's so yummy!!

Black Bean Salad

1 can black beans, rinsed and drained well
3 artichoke hearts, chopped
1 stalk celery, chopped
1-2 T chopped green onion
1-2 T chopped fresh parsley
Juice from 1/2 lemon
1 T olive oil
Salt & pepper

Mix well!! So good!!

Nutritional Info for the WHOLE thing:

442 Calories
16g fat
21g Protein
66 carbs

Just in time for Thanksgiving! I don't even like Sweet Potatoes and I loved these!!

Sweet Potatoes

6 med sweet potatoes (or 3 large)
¼ c water
½ t salt
½ c light brown sugar
¼ c chopped pecans
¼ c butter

mini marshmallows

Cook potatoes, peel after cooked/cooled. Slice and place in baking dish.

Preheat oven to 350*


Combine butter, salt, sugar, and water. Stir over low heat until butter melts & sugar is dissolved. Boil uncovered. Pour over sweet potatoes and cover with butter mixture. Top with mini marshallows.


Bake 15-20 minutes until bubbly

Scalloped Broccoli

2-10 oz pkg chopped broccoli
1/2 lb Velveeta
1 sleeve ritz crackers (crushed)
1 stick of butter, divided in two

Cook broccoli, drain well. Mix in 1/2 stick of butter and Velveeta. Place in buttered casserole dish. Mix crackers with remaining 1/2 stick of butter and sprinkle on top of broccoli mixture. Bake at 350 for about 15-20 minutes until bubbly.
